When you’re a plant-based eater, sometimes you might forget that you don’t have to “make” something for dinner all the time. Just heat up a combination of vegetables and you’re good.

For tonight’s meal, some steamed Brussels sprouts (a personal fave!), asparagus (another fave), and a baked russet potato. My new thing for potatoes – tons of smart balance and tofutti cream cheese with a dash of salt. Oh baby!  I could live on such things forever! So tasty you’re really sad when you get to that last bite.
